Chicken Mole uses Chocolate as an Ingredient

Chocolate and Chiles? Of course! Another great chocolate festival showcase. Chocolate loves chilies; spicy chili chocolate truffles are delicious. As for the food of the gods (chocolate) and some say the country the food originated in (Mexico), this pairing is always amazing. Moles come in various flavours and ingredients, with chili peppers as the common factor. However, the classic mole version is the variety called mole poblano, which is a dark red or brown sauce served over meat. The dish has become a culinary symbol of Mexico’s mestizaje, or mixed indigenous and European heritage, both for the types of ingredients it contains as well as the legends surrounding its origin. The most common version of the legend takes place at the Convent of Santa Rosa in Puebla sometime early in the colonial period. Upon hearing that the archbishop was going to visit, the convent nuns went into a panic because they were poor and had almost nothing to prepare. The nuns prayed and brought together the little bits of what they did have, chili peppers, spices, day-old bread, nuts and a little chocolate and more. They killed an old turkey they had, cooked it and put the sauce on top; and the archbishop loved it. PS - thanks to our Board Member Sandra Smith for sharing this legend.

Seared Kangaroo Recipe

Seared Kangaroo - at a chocolate festival? You bet! This recipe was created for the Wellbrook Winery and Chocolate Pairing. We wanted a savoury appetizer to pair with a beautiful dry Blueberry Wine - the Wellbrook Reserve. Of course, the savoury had to have chocolate as an ingredient. Our guests loved the Kangaroo with the Blueberry Cranberry Chocolate Compote, and asked for the recipes. Hence, Kangaroo in a Chocolate Festival Blog. Enjoy

Blueberry Cranberry Chocolate Compote

Recipe for blueberry cranberry compote, with chocolate as an ingredient. Made for the Festival of Chocolate, to pair with the Wellbrook Winery Blueberry Reserve wine. We served this on a kangaroo tenderloin, but this compote would be delicious on many items - from cheesecake to chicken, pork to cheese trays.

The creation of a tasting event takes hours - trial and error, palate pleasing profiles, and interesting creations. The components for the Wellbrook Winery and Chocolate Pairing incorporated all the culinary arts, several guest chefs and assistants who all volunteered to help taste wine, chocolate, and appetizers. Yes, life could be worse.

Pairing Wines with Chocolate

Rule #1, pairing wines and chocolate are not straightforward pairings. It will take a bit of experimenting to find the best wine and chocolate combinations. Remember your palate impressions may be very different from those you are tasting and testing with. However, a more pleasurable task may be hard to find. And that was certainly proven at our Wine and Dione’s Chocolates tasting last night at Ocean Park Pub. Our guests loved the pairings, and had some fun creating new pairings.
