Pairing Wines with Chocolate

Rule #1, pairing wines and chocolate are not straightforward pairings. It will take a bit of experimenting to find the best wine and chocolate combinations. Remember your palate impressions may be very different from those you are tasting and testing with. However, a more pleasurable task may be hard to find. And that was certainly proven at our Wine and Dione’s Chocolates tasting last night at Ocean Park Pub. Our guests loved the pairings, and had some fun creating new pairings.

Expectations of a Festival of Chocolate

Chocolate is one of the few foods we as humans will plan an entire festival around. It knows no boundaries. Despite its tiny geographical crop footprint, the cacao bean has penetrated every culture with its uniquely seductive panache. One is never too old nor too young to crack off a corner of a fresh bar, inhale its personality and let it magically dance on their tongue. And chocolate goes with everything. It’s poured on insects and stuffed in olives, baked with, cooked with, danced with, paired with booze, bacon, yoga and meditation. We have worn chocolate. We make art, movies and literature about it. We even build things with chocolate.
